After being sick for years we discovered that both me (Melissa) and my daughter, Jolie, have celiac. We went gluten-free cold turkey, and have never felt better. It is such a relief to eat and enjoy eating again, without feeling sick every time.
When we first started eating gluten free, everything I had tasted gritty and gross! I didn't care too much because I didn't feel sick. I thought I can do gritty and gross the rest of my life, as long as I don't have to be sick! But my poor husband and the rest of my family didn't want to eat gritty and gross.
My mom has been such a BIG help for me and my daughter in our gluten free process. When we come over for dinner everything that is served is gluten free. She tries out new stuff, buys new and different flours to experiment and grinds all of my rice for me! She reads a lot to learn more and passes that knowledge onto me. My mom is super mom! We are so lucky to have her as our mom and "Macca!" (the name that my daughter gave her a long time ago in place of grandma!)
My sister, Briana, likes to cook too and helps us find new recipes! Briana is expecting her first baby in October! She is so sweet and never complains about having to eat gluten free when we are around! Even though we don't all live close we enjoy and cherish the time we spend together!
We didn't understand too much about all that being gluten free involved. After A LOT of research, trial and error, we now have a hold on what tastes good and what doesn't! When we make our food, we strive to have people NOT know it is gluten free. Most people are surprised that our food is gluten free and says it tastes "normal!" To me that is a HUGE compliment! We have spent a lot of time and energy researching out recipes altering them and trying them out. We want to share our knowledge of gluten free with everyone out there that wants to know more!
Being gluten free is hard, yes, but it is not as bad as everyone makes it out to be. With a little planning and preparation, we can eat "normal" just like everyone else!
